Cucumber, Mango and Wild Shrimp Salad

Ingredients:

  • 4 large cucumbers, peeled and cut into
    1/2-inch cubes
  • 1 large mango, peeled, pitted and cut into 1/2-inch cubes
  • 1 pound medium shrimp, cooked
  • 3 tablespoons rice wine vinegar
  • 3 tablespoons sugar
  • 6 tablespoons Dijon mustard
  • 6 tablespoons mayonnaise
  • 3 tablespoons chopped fresh dill
  • hot pepper sauce
  • 10 leaves lettuce

Directions:

  1. Mix vinegar and sugar in small bowl until sugar completely dissolves.
  2. Add in mustard and mayonnaise.
  3. Cover and chill.
  4. Combine cucumbers, mango, shrimp and dill in large bowl.
  5. Pour dressing over; toss to lightly coat.
  6. Season with salt and hot sauce.
  7. Arrange 2 lettuce leaves on each plate.
  8. Top with shrimp salad.
  9. Garnish and serve.

Hot sauce

To Carol, The amount of hot sauce all depends on your taste. I recommend tasting the hot sauce to know how much to add. All hot sauces are different.

recipe for Cucumber, Mango and Wild Shrimp Salad does not say how much hot pepper sauce to use.I have never used this product
